HACCP (Hazard Analysis and Critical Control Points) is a preventive food safety management system that systematically identifies and controls biological, chemical, and physical hazards throughout the food production process to ensure food safety. It emphasizes risk control from raw materials, processing, packaging, to distribution, and is recognized internationally as a key standard for food safety. ISO 22000:2018 is an international standard developed by the International Organization for Standardization (ISO) for food safety management systems. It integrates the principles of HACCP with the ISO management system framework and is applicable to all organizations within the food supply chain. The 2018 version places greater emphasis on risk management, communication with interested parties, traceability, and continual improvement. It adopts the High Level Structure (HLS), making it easier to integrate with other systems such as ISO 9001. Both HACCP and ISO 22000 aim to protect consumer health. While HACCP focuses on hazard control, ISO 22000 expands into comprehensive system planning. Implementing these standards helps businesses build trust in food safety, comply with regulations, reduce risks, and enhance competitiveness in the international market.
